Colombia Andaki was named after the Indigenous community located in the area where coffee is collected. After the coffee is collected by the small producers from Huila, logistically it is transported to the common wet mill created by Felipe Aristizabal in Villamaria, Caldas. When the coffee is received it is put in a container to measure density and to remove any floating beans. They then follow a hand sorting process, which is led by the women of the area, to separate any bean from the ripe and overripe. The fermentation process happens for up to 72 hours.
